BIG ISLAND FETA SKEWERS

Recipe by Jana McMahon

Thanks again Jana for your "cheesy" contribution and continued love of cheese, wine and fun times!

The Big Island feta, tomato and Kalamata olive skewers paired delightfully well with the Segura Viuadas Brut Rose. The saltiness from the feta and olives brushed with the sweetness of the marinade made for a wonderful marriage of flavors of the wine, cheese and everything!

  • 2 Tbl. fig vinegar
  • 2 Tbl. orange olive oil
  • ¼ tsp. Pepper
  • 1/8 tsp. Salt, plus more for seasoning
  • 1 Tbl. fresh mint, chopped
  • 8 oz. Big Island Feta Cheese, cubed
  • 24 pitted kalamata olives
  • 24 small cherry tomatoes (cut in half if too big, sweet 100's are the perfect size)
  • 24 whole mint leaves
  • 24 five-inch skewers

Combine fig vinegar, olive oil, pepper, salt and chopped mint in a small bowl with a whisk. Add the feta and set aside.

To assemble; Slide 1 cherry tomato on a skewer. Fold 1 mint leaf in half; slide onto the skewer. Add 1 kalamata olive. Add 1 piece of marinated feta. Repeat until all the ingredients have been used. Place on plate and brush skewers with remaining marinade.

Ravishing Rose Tasting Recap

Though each pairing was liked, Monte Enebro and Scherrer Rose seemed to be the most popular; however, we sold out of Monte Enebro quickly! It is a relatively new cheese comparatively in the world of cheeses, only introduced by Rafael Baez 20 years ago.

It is a raw goat's milk cheese from central Spain, Valle del Tietar, a Provence of Avila -50 miles west of Madrid. The story goes that this 3lb ashed log is to resemble a Castilian mule's foot - we don't see that at all! As well as we didn't agree with Janet Fletcher, author of the Cheese Course, in that she finds the rind of Monte Enebro difficult to pair with wine. It was absolutely fabulous with the Scherrer Rose of 100% Pinot Noir! The cheese has very velvety palete feel with lush full flavors of nuts and herbs. There is still a slight tang to the cheese as well, very well balanced and integrated. It has been on the top 100 products' list from Spain for a few years now. $40/lb

Scherrer Rose is made of 100% Pinot Noir sourced from Sonoma Coast, and this operation is literally a one-person operation. Fred selects fruit that is the best reflection of these award winning vineyards. It is on the femine side, soft, silky yet full and lush with ripe cherry fruit on the palate. Darn yummy! $21.99

This rose tasting inspired us to have appropriate attire...most wore their best "pink"! An inspiration for next year's rose title..."Pretty in Pink"! And everybody was!

Next month's tasting we are asking all attendees to dress in white to keep in the theme of the Blind White Wine Tasting. Should be fun! Followed by October which will be red dress for the Blind Red Tasting.
