Mark your calendar for this fun-filled event for the whole family! There will be decorated Gingerbread Cookies & Houses, as well as blank kits for you to take home. Also available will be Christmas cookie platters & gift boxes with a variety of cookies. While you're there, go into Who Cut The Cheese to enter a drawing for a free $50 WCTC gift certificate or a free Lighted Gingerbread House (value $75). Yummy truffle samples will also be on hand to taste and every person gets a free 3" cookie to decorate!! Learning, eating, and prizes...it just doesn't get much better for a great family outing!

Holiday Truffle Cheese Treats
Brillat triple creme with black truffle by J. Cange. This is another Belguim beauty, just as Fourme au Sauterne Bleu which originates in Belguim, then is fined in Sauterne, France. It is also bathed in Sauterne while it ages, so it makes for a succulent and slightly fruity blue. A must for any holiday treat!
We represent all animals! The J. Cange Truffle Brillat triple creme is one of the cow's milk black truffle cheeses orquestrating this quartet in the cheese case!
Here are the others....
Representing the goat category is Cypress Grove's Truffle Tremor (pictured above), an aged Humboldt fog which lends to be a little firmer and infused with black truffle. We like to think of it as Humboldt Fog on steroids!!!
Leading the sheep is our ever so popular Il Foreto Pecorino with Black Truffle. This cheese is a semi-firm to firm pecorino just bursting with truffle aromas and flavors. We have a customer who loves to put her risotto in a whole wheel of this Italian "tresor" (treasure)!
Another cow from the Netherlands is the Lindenhoff Truffled Gouda. Just try this delectable with a drizzle of honey, as a matter of fact, we are featuring Bear's Backyard Honey from Kihei...ooooh yummer!!!

Wine & Cheese Cruise aboard the Alii Nui
November was the inagural wine and cheese cruise aboard Maui Dive Shop's prized gem, The Alii Nui, measuring an impressive 65' from stem to stern and 36' port to starboard, it is truly the premiere sailing catamaran on Maui. The wines were global, the cheeses were French, the tasty tidbits were bountiful, and the crowd was thrilled!!! And let's not forget the awesome sunset tour delivered by Captain Chris and his professional crew. It was such fun we may just have to start offering a monthly wine and cheese cruise!
New Libations!
 Bubbly Bitch
This is 100% Grenache from Southern Australia with bubbles! It's just a fun sipper, nothing too serious, and won't "hurt" you with the low alcohol of 11%.
It tends to be on the fruity side, but not too sweet. Hints of strawberry, tangerine, and peach are on the nose and palate. Just good fun... like us! We're quite sure you can come up with a girlfriend or three who needs to receive this for the holidays!
Calvados
A fun alternative to cognac, Calvados is made in the same fashion as cognac and Armagnac, but it’s made from apples and sometimes pears may be mixed in. The premium calvados carry the French AOC label — appellation d’ origin. To be an AOC designate the calvados must be aged a minimum of two years. VSOP (very special old pale) requires 4 years aging.
By law, at least 48 varieties of apples must be in the blend, and again, sometimes pears. One producer, Boulard, uses 120 varieties of apples. None of these are eating apples, and they can be categorized as bitter, bitter-sweet, sweet and tart. The apples are pressed into a cider then are fermented naturally. It becomes a spirit once the cider under goes distillation which is still done in copper pots or kettles.
Calvados must be aged to be in the “quality and prestige” levels. Young calvados will have the most fresh apple flavors with delightful lightness. Lightness is of course in relation to alcohol content.
